The name
The name Tallo was conceived during a heartfelt conversation between Chef José Soto and his daughter Penelope, just weeks after Hurricane Maria swept through Puerto Rico. Watching the plants begin to bloom again and the trees push out new branches, they reflected on the vital role of a plant's stem — the tallo — working in harmony with the roots to bear fruit.
The stem is the channel, the lifeline transporting nutrients between roots, fruit, flowers and leaves. In that same conversation, Chef shared his aspiration to open a restaurant shaped by everything he'd learned. He asked Penelope what it should be called. Without hesitation: Tallo.
